Creamy Cilantro-Lemon Dressing {Cashew Based}
So unless you’re alien, I imagine you also dislike eating bland food. But there are so many things that we should eat - that we really don’t want to - because how much salt can we really add before it’s way too unhealthy? Especially on a low- FODMAP diet when onions and garlic are a no-no.
Enter yummy sauces. Now some of you may wonder, how is this low FODMAP- it has cashews in it! According to Monash, cashews in quantity of 15g have the green flag; 30+g have the red flag. 1.5 cups of cashews is about 225g (estimating high). Divided by our portion size here, we see each serving is only about 19g of cashews. If you’re super super sensitive, I would just consume a smaller portion size and see how you feel!
It’s also made with garlic-infused olive oil to give us a little bit of that garlic flavor we want without the fructans. In case you’re new to low-FODMAP, garlic infused olive oil is a green flag winner and a must have for tasty cooking!

Ingredients:
1.5 cups raw, unsalted, unroasted cashews
3/4 cup water
2.5 tbsp garlic infused olive oil
2.5 tbsp fresh lemon juice
3/4 tsp salt
1/3 bunch of fresh cilantro (without most of the stems)
1/4 bunch of fresh parsley (without most of the stems)
2 tbsp dried oregano
Juice & zest of one lemon
1 tbsp Dijon mustard
Salt & black pepper to taste
Directions:
1. Before you’re ready to make the sauce, place cashews in a bowl with water (make sure the water covers the nuts mostly), and let them soak for 6 hours.
2. In a food blender, blend the cashews, water, olive oil, lemon, and salt until smooth, about 5-8 minutes with periodic checks to scrape down the sides.
3. Once 98% smooth and creamy, add the remaining ingredients and blend again, about 3-6 minutes. Check intermittently and scrape down the sides when needed to ensure all the ingredients are being blended.
4. Bon apetit! Store in air-tight container for up to a week in the fridge.
