Buffalo Feta Meatloaf!
I love Buffalo Sauce. Enough said.
But really. I used to love buffalo chicken dip. I probably could have had it every day. Thank goodness my dairy problem stopped that from happening. Some days I use buffalo sauce to season my scrambled eggs, which apparently is a little weird..but I love it.
Anywho, I saw a take on this with blue cheese but thought, how much better would it be if it was with a cheese I always like (yes I said it, blue cheese ain’t reliable), and wouldn’t irritate me with the garlic or onion? Well, here you have it. De-licious. Enjoy!

Per Serving: 443 cal 35 g protein 31 g fat 11 g carbs
Ingredients:
1 lb ground beef
1 egg
1 large carrot, chopped
1 teaspoon paprika
1 tsp chili pepper (I use Trader Joe’s ghost chili powder)
Sea salt and black pepper to taste
1/4 cup + 1/4 cup mild buffalo sauce
1 cup almond flour
1/2 cup + 3 tablespoons Feta cheese crumbles
Directions:
1. Preheat oven to 375 degrees and line a baking sheet with parchment paper.
2. In a large bowl mix together beef, egg, carrot, spices and buffalo sauce well.
3. Next mix in the almond flour to the mixture.
4. Place 1/2 the meat onto the baking sheet and form a large flat “log” using your hands.
5. Crumble 1/2 cup of the feta cheese in the center, then place remaining meat on top and along the sides.
6. In a small bowl, mix together 1/4 cup buffalo sauce and the 3 tablespoons feta cheese and evenly pour/place on top of the loaf.
7. Bake in oven for 40 minutes.
8. Enjoy!
