Easy Dairy-Free Greek Sauce

Looking for something to add a little bit of Greek/Mediterranean flare to your meal…without garlic or onions? Try out this sauce; I doubt you’ll regret it. It’s a modification from the cookbook Taco Tuesday by Laura Fuentes - she is magnificent. Would highly recommend the cookbook if you’re on a regular diet or don’t mind thinking through tweaks for your paleo or low FODMAP diet!

I’d recommend using the entirety of this sauce within a week or max 10 days if your fridge is really cold. I usually plan two back-to-back Greek meals so we can use it all up!

Per Serving: 31 cal 0.9 g protein 1.7 g fat 3.2 g carbs


Ingredients:

  • 1 medium cucumber

  • juice of 1 medium lemon

  • 1/2 tsp salt

  • 1/2 tsp dried dill

  • 1 cup plain unsweetened dairy free yogurt


Directions:

1. Grate the cucumber into a bowl (you can leave the skin on!)

2. Juice the lemon directly into the bowl, then add the dill and salt.

3. Add the yogurt and stir until fully blended.

4. Enjoy!
