Paleo Nutty “Oats”

So on a paleo diet, the idea is to eliminate all grains, which includes oats. Since I’m more focused on what my body feels good eating, I personally wouldn’t mind (and feel fine) with eating oats in small doses - my problem is actually that I don’t find them very filling nor high in protein nor fat.

What’s funny is - I’ve always felt like that. In grad school, people would eat oats and peanut butter with chia seeds daily. And I tried because, hey that sounds healthy right?? I would always be so hungry just two hours later.

Anyway, all that to say - I’m over oats. It just doesn’t give me enough to put in my diet. But granola — that’s another story! Typically granola is made from oats, but this recipe is made without oats. It’s just a bunch of simple, tasty nuts bonded together to make your tummy and body happy. That’s it. Enjoy :)


Active Time: 10 mins Inactive Time: 15 mins Yields: 14 servings (about 1/8 cup each)

Per Serving: 104 cal 2.2 g protein 7.1 g fat 7.6 g carbs


Ingredients:

  • 1 cup shredded coconut

  • 1/4 cup sliced almonds

  • 1/4 cup pepitas (pumpkin seeds)

  • 1/4 cup chopped pecans

  • 1 tbsp chia seeds

  • 1 tbsp flax seeds

  • 1/2 tsp cinnamon

  • 1/4 tsp salt (or more if desired)

  • 1 tsp vanilla extract

  • 2 tbsp maple syrup

  • (Optional but included in nutritional content above) 2 tbsp Vital Protein Collagen, unflavored


Directions:

1. Preheat oven to 300 degrees F.

2. Mix all ingredients in a bowl. The protein powder will blend in, don’t worry!

3. Lay out evenly on parchment paper on a baking sheet.

4. Bake for 15 mins, or until the coconut shreds are a light golden brown.

5. Enjoy!
