Pineapple Sticky Chicken

Do you love the smell of good food circulating around your home? Do you eat meat? If so, this is for you. I used to love coming home and smelling this chicken baking in my parent’s house. Though it’s not Egyptian…it comes from an Egyptian family! I just tweaked it a little to make it low FODMAP/paleo :)

Active Time: 20 mins Inactive Time: 2 hours Yields: 14 drumsticks

Per Serving: 202 cal 14.4 g protein 6.5 g fat 22.1 g carbs


Ingredients:

  • 2 lb chicken drumsticks

  • 1 can 8 oz pineapple juice (if you can’t find pure pineapple juice, I just buy 2 cans of pineapple chunks, use the juice from both, some of the chunks, and then store the rest of the chunks away for another meal/purpose)

  • 1 cup coconut sugar

  • 1 cup coconut aminos


Directions:

1. Preheat oven to 350 degrees F.

2. On a stovetop on medium heat, combine the pineapple juice (with chunks if present), coconut sugar, and coconut aminos. Heat for about 5 min, or until the coconut sugar has completely dissolved.

3. While sugar is dissolving, take a baking dish and line with the drumsticks.

4. Once sugar mix has dissolved, pour over the drumsticks.

5. Bake for 2 hours, flipping the drumsticks halfway through.

**Note, this recipe does work well if you half it, depending on how much chicken you need!
